Hummus goes fast in my house. As vegetarians we eat it a lot. My daughter loves chickpeas so hummus is another great way to get some protein into her. I decided to try making sweet potato hummus for a Halloween feel with the sweet potato. Plus I just got a food processor for my birthday, so expect a lot more recipes that I can make using that!
- 1 large baked sweet potato (I baked in for an hour in the oven earlier in the day)
- 1 can of chick peas
- 1-2 tbsp. of tahini
- 2-4 cloves of garlic
- salt & pepper to taste
- I pretty much just shoved everything into the food processor, blended it on high until it was smooth and added the salt and pepper to taste, which wasn't much at all since my baby was eating the hummus too.
I serve it with pita, cucumbers, carrots, naan crackers, tortilla chips, pretty much anything.
