Baked Acorn Squash Stuffing

With American thanksgiving coming up I thought I would post my favourite stuffed squash dish as an alternative to stuffing, or just a great side to have at your regular meal.

Baked Acorn Squash STUFFING - Dress up your holiday table with this delicious Baked Acorn Squash Stuffing, perfect for any vegetarian and super easy to make.

Ingredients
  • Acorn Squash
  • 3 Cloves
  • 2-3 Shallots
  • Olive oil
  • 1 Apple
  • 1-2 stalks of Celery
  • Pecans (a few tbsp, I grind in a mortar & pestle but you can chop)
  • Salt & Pepper to taste
  • Sprinkle of Sage
  • Fancy cheese (swiss, Havarti, whatever you have on hand)
Instructions
  1. Cut an acorn squash in half. Cook in oven for an hour until squash is cooked. Let cool a bit before handling so you don't burn yourself.
  2. While squash is cooking cut up and sauté your garlic and shallots in some olive oil until translucent. Add in chopped peeled Apple and finely chopped celery and sauté a bit more until soft. Add in pecans.
  3. Scoop out inards, leaving ½-1 inch still intact to maintain the shape of the shell.
  4. Mix squash with stuffing. Add spices. Scoop filling back into squash.
  5. cut cheese and add on top of stuffed squash

 

I love squash and stuffing, so combing them is a win-win!  I have had this as a snack, a meal-side, and it is delicious and can be adapted for any occasion. I hope you like this!

      Ha ha no squash? No idea how one gets by with no veggies! But I have no meat so I guess I should hold my tongue lol!
